When I have one of those days I need comfort food, something that is going to make me happy without making me miserable after I eat it. I make my dad’s Lemon Chicken. It is a really easy chicken dish that only takes a few minutes to prepare but tastes amazing (and isn’t too bad for you either). So from my kitchen to yours: make, eat, and enjoy! Dad’s Lemon Chicken What you need- (makes 4) 4 chicken breasts Lemon juice (fresh or from bottle both work) 4 tablespoons butter Paprika Preheat your oven to 350°. Place the chicken in a 9×13 cake pan, the pan size does not really matter; this is just the size that I happen to use. Spread them out so that you have at least ½ an inch in between each piece. Drizzle the lemon juice over each piece until you have enough to cover the bottom of the pan. Cut the butter into thin pats and cover the chicken with them. Sprinkle the paprika over the dish and put in the oven for 30-35 minutes. I usually serve this with red potatoes covered in butter, parmesan cheese, and parsley. Green bean casserole is another favorite with this dish!
